Course Description:

This two-part educational course empowers you to rethink food through an eco-intelligent lens—one that honors human health, environmental integrity, and ethical responsibility. Designed for parents, nutrition educators, and eco-conscious young adults, the course moves beyond conventional dietary advice to reveal how today’s industrial food system impacts the land, water, ecosystems, and our bodies. You’ll explore the limitations of the USDA Eating Model and discover the Eco-Intelligent Eating Model™, a sustainable alternative rooted in organic, regenerative farming and whole-food nourishment.  You will also learn why, for decades, political lobbyists have excluded an environmental/sustainability agenda from the Dietary Guidelines, and why the eating model may never focus on sustainability.

You’ll learn the difference between farming and eating the “eco-negligent” way, and farming and eating the “eco-intelligent” way. You’ll learn about how these two different methods of farming and eating influence the relationships that govern the health and well-being of your personal ecology system (your body, mind, heart and soul), as well as the relationships that govern the health and well-being of the earth’s ecology system (plants, animals, insects, and ecosystems). These two systems, you will see, are one system whose parts are designed to function interdependently for optimal wholeness.

My book is utilized in Parts 1 and 2 of the training. Along with videos that are part of the course, you’ll get access to illustrated book chapters (in PDF format) that provide an in-depth understanding of how the foods that are featured in the USDA Eating Model and the Eco-Intelligent Eating Model™ are produced, and how they contribute to health or disease in your body and the earth. With each chapter, your knowledge about the connection between personal and planetary health will deepen. You will develop a keen awareness of why it’s not enough for dieticians and nutritionists to focus on the calories, proteins, carbohydrates, and fats in foods alone when it comes to creating health.

Part One of the Course

9 Engaging Video Learning Modules:

In Part One, you’ll meet the USDA Eating Model, a model (influenced by corporate interests and biases) that, because of its ties to our nation’s toxic industrial farming system, has long been out-of-step with our human dietary needs and our planet’s dietary needs. You’ll learn how the people, animals, plants, insects, and ecosystems that are part of the industrial food production cycle are harmed in the “farm-to-table process, and how the foods produced by them (including dairy products, meat, eggs, grains, beans, fruits, vegetables, nuts, seeds, and sweeteners) deplete your health. 

Learning Outcome:

By the end of the course, you will be equipped not only to replace unhealthy foods from your diet but to explain and advocate for healthier choices with clarity and confidence.   

Part Two of the Course

16 Engaging Video Learning Modules:

In Part Two, you’ll meet the Eco-Intelligent Eating Model™, a model that inspires awareness about the value of organic, regenerative farming, whole foods nutrition, and eco-conscious cooking and eating habits. You’ll learn how the people, animals, plants, insects, and ecosystems that are part of the organic, regenerative food production cycle are restored in the “farm-to-table process, and how the foods produced by them serve to protect and nourish your health. You’ll also have the opportunity to explore the food groups that the Eco-Intelligent Eating Model suggests you eat (including whole grains, legumes and sprouts, herbs, spices, and healthy salt, nuts, seeds, and plant oils, fruits and vegetables, green superfoods, organic, grass-fed meats, organic, grass-fed dairy products, 9) fish and sea vegetables, dairy-free products, organic, grass-fed eggs, plant-based sweeteners, and clean water.

Learning Outcome:

By the end of the course, you will be equipped not only to make eco-intelligent eating choices, but to model, explain, and advocate for those choices with clarity and confidence, in effect, raising eco-conscious, food-literate diners.
